{Wild Blueberry Lemon Cake Recipe}

Is anyone else stress-baking?

Here's another great recipe from our friend The Kilted Chef for you to try at home this week.

Wild Blueberry Lemon Breakfast Cake
(Serves 6)

INGREDIENTS
1 cup of all-purpose flour
1 cup of cornmeal
2/3 cup of sugar
3 ½ tsp baking powder
½ tsp salt
1 cup buttermilk
One egg slightly beaten
1/3 cup canola oil
2 tbsp lemon zest
1 cup wild blueberries dusted with 1 tsp of flour

METHOD
1. Combine the dry ingredients and set aside.

2. Combine the wet ingredients and mix with the dry ingredients, fold in the wild blueberries.

3. Place mixture into a 9-in cast iron pan or an 8x8 baking dish coated with non-stick spray.

4. Bake in a 400F degre oven for 25 to 30 minutes.

Quick little dessert! Bake 8 of your favourite cornmeal muffins or even a plain vanilla cupcake. Mix 1/3cup sugar, 4t. Cornstarch, 1/4t. Salt in a bowl. Add 1.5 t grated lemon zest. Toss with 6 cups frozen wild blueberries and 1 T lemon juice. Pour into a 9 inch deep dish pie glass pie plate and microwave 10 minutes (more or less depending on power) stirring often until sauce is thickened and berries have burst.
